    Ingredients
    5 large potatoes, peeled
    cooking oil spray
    1 onion, finely chopped
    2 eggs
    2 tablespoons fresh herbs
    1/2 cup 97% fat-free sun-dried tomatoes, chopped
    4 vegetarian sausages
    large green salad, to serve

Instructions
Step 1 Cook potatoes in boiling water. Mash and season as desired.

Step 2 Spray pan with oil. Cook onion over medium heat until soft. Add to mash, along with the eggs. Mix until smooth. Stir in herbs and tomato.

Step 3 Spoon into non-stick pan sprayed with oil. Cook each side for 5-6 minutes over medium heat.

Step 4 Meanwhile, cook sausages in a non-stick frying pan. Slice into quarters. Cut mash into quarters and serve with sausage and salad.
